The Murray River is the largest river in Australia. It empties into the Murray Darling Basin where low rainfall leads to a high concentration of salinity. This high saline water is fed into ponds where the arid climate of northwest Victoria causes rapid evaporation. The pale pink color comes from carotene secreted by salt tolerant algae. The light, flaky pyramid shaped crystals of murray river pink salt make an excellent finishing salt. The delicate flakes melt quickly and evenly and 'sticks' to the food. It has a light flavor and is perfect for salads.
