Aged Provolone

Provolone cheese is distinguishable by its fuller flavors, achieved through the use of more cheese cultures. Early cheesemakers originally used ropes to hang and cure Provolone cheese, then reused the ropes to transport the cheese by horseback. Provolone cheese is crafted from fresh local milk, brined, and hung to age in special curing rooms to develop its signature flavor and tantalizing aroma.

This particular Aged Provolone, or ‘Piccante,’ has been matured for at least 4 months, with a slightly darker and firmer texture than a mild Provolone cheese. Some consider this cheese to have a ‘spicy’ flavor, being a full-bodied, full flavored, and robust cheese.

Piave

A cow’s milk cheese that is made in the Piave River valley region of Belluno, made from the milk of two milkings. The evening milking is semi-skimmed in a natural skimming process to remove the cream before the milk is mixed with the milk from the morning milking. Produced as a wheel, Piave cheese has a dense texture without holes that is straw-yellow in color and slightly sweet with a delicate tasting flavor. A fully matured cheese after being aged for 10 months. Once fully aged, it becomes hard and well suited as a grating cheese. The aged cheese is referred to as Piave Vecchio or Stravecchio.
